Captain Dick May grew up in the restaurant business. His parents were professional
restaurateurs. When he grew up, it was only natural that he would follow in their
footsteps. After 40 years in the restaurant business, he retired to Bokeelia, Florida,
and started a charter fishing business called Easy Rider Charters. What he had once
done as recreation, he now does as a business.
When his how to cook what they caught, he was always ready with a recipe. Eventually,
he started writing a column for the local newspaper and local marine publication
Nautical Mile titled “Catch ‘em & Cook ‘em”. As time went on, people told him that
they read his recipe columns on the internet up north in the summers and wished that
he would put al of his recipes together in a book.
Some of the recipes in the cookbook have not made it into papers and some of the
recipes in the papers have not made it into cookbooks. This is because he was always
finding new ways to cook the wonderful bounty of the sea which he catches practically
in his backyard.
